1-2A Violation of Code: [511-6-1.03(2)(a)-(l)(n)(o)] Active Managerial Control measures are not satisfactory for establishment to be in compliance with code. Corrective Action: Food employees should be retrained on safe food handling procedures (especially handling fruits/vegetables to be used as toppings/garnishes versus fruits/vegetables that will be cooked). Suggested establishment check temperatures of food in the coolers in the middle of the day and keep a log.  New Violation.
2-1C Violation of Code: [511-6-1.04(4)(a)1,2,3,4(i)-(iii)] Observed one food employee handling and slicing oranges for garnish bare-handed and a second food employee grab toasted bread from the oven bare handed. Corrective Action: Instructed employees that ready to eat food (food that has finished cooking or will not be cooked) cannot be touched with bare hands. Employees must use gloves, utensils, or deli papers to touch ready to eat food. The oranges were discarded and the bread was placed back in the oven.  Corrected On-Site.  New Violation.
4-2B Violation of Code: [511-6-1.05(7)(b)] REPEAT: Observed excessive finger residue on the lids of both ice machines. Corrective Action: Instructed Person-In-Charge to increase the cleaning frequency of the ice machine lids and have employees lift the lids by the edges. Both lids were immediately cleaned.  Corrected On-Site.  Repeat Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Observed multiple potentially hazardous food in the back walk-in cooler and the front salad prep cooler not at 41°F or lower (walk-in cooler: spaghetti 47°F, buttermilk 47°F, ham 47°F. salad prep: sliced tomatoes 47°F, sour cream 49°F, blue cheese dressing 51°F, sliced cucumbers 46°F, ranch 49°F. underprep reach-in cooler: sliced tomatoes 52°F, sliced cucumbers 55°F. See Temps). The walk-in cooler was turned down and left closed; the temperature had not improved after 35 minutes (ham 47°F, meat sauce 49°F, raw chicken 46°F. See Temps.). Corrective Action: Items left in the coolers were in acceptable temperature range this morning and several items were prepared this morning; everything in the out of temp walk-in cooler and the salad prep unit were placed in the second walk-in cooler and reach-in coolers throughout the kitchen. Person-In-Charge called to have a repair technician come out to look at the coolers.  New Violation. Correct By: 04/16/2018
12A Violation of Code: [511-6-1.04(4)(i)] Observed several containers of raw fish and raw shrimp stored in direct contact with undrained ice. Corrective Action: Instructed Person-In-Charge to drain the water out of the containers; raw fish and shrimp cannot be stored in ice water. Suggested Person-In-Charge purchase drain trays to keep the ice and raw fish/shrimp out of any accumulated water.  New Violation.
