Corrective Action: PIC was notified about the issue, food prep employees will be trained and retrained on proper food handling and food temperatures / practices.  Corrected On-Site.  New Violation.
2-2B Violation of Code: [511-6-1.03(5)(j)1&2] Observed employee drink (open bottled water) stored in reach-in cooler, employee coffee cup without a straw stored at waitress station.
Corrective Action: PIC was notified about the issue, PIC discarded the drinks. PIC was educated about proper employee drink policy (Disposable cup, Lid and Straw).  Corrected On-Site.  New Violation.
5-1B Violation of Code: [511-6-1.04(5)(h)] Observed improper reheating of previously cooked TCS food items below 165 degrees. Observed green beans with ham and brown gravy stored in warmer cabinet not reach 165 at all parts after reheating. Green Beans with Ham 120 degrees at different parts. Brown Gravy 127 degrees at different parts.
Corrective Action: PIC was notified about the issue, food items were within time parameters. PIC rapidly reheated the food items in microwave. Green bean with ham 201 degrees, brown gravy 187 degrees.  Corrected On-Site.  New Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Observed improper cold holding of TCS food items above 41 degrees in reach-in cooler at waitress station. Egg Salad 46, bean sprout 47, lettuce 48, shredded cheese 47, cheese sauce 47 degrees.
Corrective Action: PIC was notified about the issue, food items were discarded or placed in walk-in cooler depending upon time parameter.  Corrected On-Site.  New Violation.
6-1A Violation of Code: [511-6-1.04(6)(f)] Observed previously cooked and cooled fried chicken stored at food prep counter without a time or temperature control. Fried chicken 97, 90 and 104 degrees.
Corrective Action: PIC was notified about the issue, food items were discarded.  Corrected On-Site.  New Violation.

Corrective Action: PIC was notified about the issue, PIC discarded the medicine and sanitized the area.  Corrected On-Site.  New Violation.
10D Violation of Code: [511-6-1.04(4)(d)] Observed multiple dry food items (powdered sugar, brown sugar, sugar) stored in unlabeled containers.

12A Violation of Code: [511-6-1.04(4)(q)] Observed ready-to eat grits and gravy at steam well not covered to protect from overhead contamination.
Corrective Action: PIC was notified about the issue, PIC was instructed to cover the food items to prevent from contamination.  Corrected On-Site.  New Violation.
14A Violation of Code: [511-6-1.04(4)(k)] Observed in-use utensils (ice-cream scoops, spatulas) stored in stagnant water in dipper well.
Corrective Action: PIC was notified about the issue, PIC was instructed to wash-rinse and sanitize the utensils and store in dipper well under running faucet.  Corrected On-Site.  New Violation.
14C Violation of Code: [511-6-1.05(10)(g)(1)&(3)] Observed plates at buffet storage rack not properly inverted to prevent possible contamination.
Corrective Action: PIC was notified of this issue, top plate was covered to protect from possible contamination.  Corrected On-Site.  New Violation.
15A Violation of Code: [511-6-1.05(6)(a)] Observed damaged warmer cabinet door, preventing proper opening and closure.
Corrective Action: PIC was notified of this issue, will submit work order to have door realigned and/or replaced.  Corrected On-Site.  New Violation.
17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed leaking faucet at the waitress station.

4-2B Violation of Code: [511-6-1.05(6)(o)] Observed used whisk taken to three compartment sink from a food prep sink, rinsed with water, and then taken to use for food prep./ stopped employee form using utensil and educated employee on proper dishwashing procedures/whisk was properly washed at that time  Corrected On-Site.  New Violation.

Items were place back into the fryer until they reached the proper temperature/educated on proper cooking temperatures and checking temperatures  Corrected On-Site.  New Violation.
6-1D Violation of Code: [511-6-1.04(6)(i)] Time was not marked for fried chicken, roasted chicken and french fries that were utilizing time as a control. Items were discarded  Corrected On-Site.  Repeat Violation.
